Homemade Halloween Oreos

Soft and delicious homemade oreos with a Halloween twist!

Ingredients
  

FOR THE COOKIE

  • 2 boxes Devil's Food cake mix (I prefer Duncan Hine's)
  • 1 cup butter softened
  • 4 eggs
  • small bowl of flour for dusting, optional

FOR THE FILLING

  • 8 oz cream cheese softened
  • 4 Tbsp butter softened
  • 1 tsp vanilla extract
  • 3 1/2 cups powdered sugar
  • orange food coloring
  • Halloween colored sprinkles optional

Instructions
 

  • Preheat oven to 325ยบ F

FOR THE COOKIES

  • In a medium/large mixing bowl, combine the dry cake mixes, softened butter, and eggs.
  • Mix with a fork until is is fully combined and there is no more dry mix.
  • Roll the dough into 1" sized balls, and (if desired) lightly roll the ball in the bowl of flour to give it a light dusting. (This will help the cookie keep more of it's shape.)
  • Bake on a greased cookie sheet (I prefer a cookie sheet lined with a silicone baking mat) for 10 to 12 minutes. Do NOT overbake! The cookies should still be soft.
  • Remove from oven and allow to cool a few minutes on the cookie sheet before removing to a cooling rack to cool completely.

FOR THE FILLING

  • In another mixing bowl (or I just rinse the first one out and reuse it), beat together the softened cream cheese, butter, and vanilla using an electric mixer. Beat for about 2 minutes until smooth.
  • Add the powdered sugar, 1/2 a cup at a time, mixing after each addition until all the powdered sugar is added and the filling is smooth and creamy.
  • Add orange food coloring and mix it in until fully combined and to the desired level of color that you prefer. (Gel paste food coloring works best, but you could also use a combination of red and yellow liquid food coloring to get the desired color.)

ASSEMBLE

  • For each 'oreo' cookie, you will take one of the chocolate cookies, place some of the filling/frosting on the bottom/flat side of it, and then sandwich it with the bottom side of another cookie.
  • If you wish to add the Halloween sprinkles around the edge, be sure to add enough filling in the middle so that when you sandwich the cookies together the filling will smoosh out to the edge of the cookies. Place your sprinkles in a shallow bowl or on a plate and roll the frosting edges of the cookies through the sprinkles so that the sprinkles stick to the frosting.
